For lunch I had a turkey sandwich again...sux, and for dinner I had smoked salmon and broccoli. Smoked Salmon This recipe gives you moist smoked salmon- not the drier, thinly sliced type you purchase at the deli. Because kosher salt has big crystals and absorbs more moisture than other types of salt, it is ideal for curing meats. You may wanna start this early because the salmon has to soak in the ingredients for 2 hours. I did mine in one.
